Better late than never
I was reminded recently at a dinner about another dinner some time ago that was a milestone for a couple friends of mine who will reach another one shortly. Almost a year late, but better late than never.
Salmon Cornets, sweet onion, creme fraiche
The infamous, and irreplaceable "Oysters and Pearls". Sabayon of Pearl Tapioca with Island Creek Oysters, and White Sturgeon Caviar
A bonus dish for those that felt left out having not purchased the truffle supplement. White truffle infused egg custard, veal and black truffle perigord, with potato chive chip.
Goliath
The ridiculous "Carnaroli Risotto Biologico" Parmigiano-Reggiano mousse, browned butter, shaved white truffles from Alba
Salad of Hawaiian hearts of Peach Palm. Crispy Medjool dates, garden carrots, Komatsuna, pickled ginger and coconut pudding
Sauteed Fillet of Atlantic Cod. Preserved Meyer lemon, hard boiled hen egg, Spanish caper mayonnaise, "Pommes Maxim's" and nasturtium leaves.
Stonington Main Lobster "Ravioli". Garden broccoli, cauliflower, arrowleaf spinach and creamy lobster broth, truffle
Thomas Farm Squab. Slow rasted ruby beets, quince "Pâte de Fruit", Sicilian pistachios and watercress
Snake River Farms Shortrib "Wellington". Caramelized cipollini onions, young leeks, black trumpet mushroom purée, pea tendrils and "Béarnaise Gastrique".
Cheese course
"La Jeune Autize". Jacobsen Orchards persimmons, preserved black walnuts and bitter lettuces
